History
The Essential Baking Company was founded in 1994 by the late Jeff Fairhall and George DePasquale. Jeff had first founded Essential Foods which was known for its wrap sandwiches. He also went on to create Theo’s Chocolates, a store called Earth Goods in the Roosevelt District and a non-profit organization called Intentional Future that would provide space and community resources for many local eco-movements.
As a founder and head baker, George developed our entire line of signature breads. From the time he was a child in Long Island at his Italian Grandmother’s knee, he has spent his life honing his craft. George is quick to share his passion for artisan baking and can be found around Seattle teaching baking classes.
Since its beginning The Essential Baking Company has been certified organic. Jeff and George initially sold our breads at the Fremont Farmers Market and baked them in the Essential Foods kitchens. In 1998, the bakery moved to the old Buchan Bakery building in Wallingford and established its first bakery café.
Today we proudly provide bread, pastry, and desserts to fine establishments throughout the Seattle Puget Sound area including grocery stores, cafes, restaurants, schools and hospitals.
